Ingredients

1 tablespoon olive oil

1 pound ground beef

2 cups sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

¼ cup water or broth

2 tablespoons fresh parsley, chopped (for garnish)

Optional: ¼ teaspoon red pepper flakes

Optional: ½ cup shredded cheese


Instructions

1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.

2. Stir in the garlic and cook for 30 seconds until fragrant.

3. Add the ground beef to the skillet. Break it up with a spatula and cook until browned, about 6–8 minutes. Drain any excess fat.

4. Season the beef with smoked paprika, cumin, salt, and pepper. Stir well to coat.

5. Add the diced sweet potatoes and ¼ cup of water or broth. Stir to combine.

6. Cover the skillet and cook for 10–12 minutes, stirring occasionally, until the sweet potatoes are fork-tender.

7. Remove the lid and let any excess moisture evaporate. Adjust seasoning as needed.

8. Sprinkle with fresh parsley (and optional cheese if using), then serve hot.


Notes

Dice sweet potatoes into small, even pieces so they cook quickly and evenly.

If your skillet dries out before the potatoes are done, just add a splash of broth to keep it moist.
