Sweet Potato Fries:

  • 2 medium sweet potatoes, peeled and cut into fries
  • 1 1/2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper
  • Optional: 1 tbsp cornstarch

Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or parsley, chopped
  • Salt to taste

Bowl Base:

  • 3 cups fresh greens (romaine, spinach, or mixed)
  • 1 cup cherry tomatoes, halved

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes.

  3. Preheat grill or grill pan. Cook chicken for 5–6 minutes per side until cooked through. Let rest, then slice.
  4. Combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, herbs, and salt in a bowl to make tzatziki.
