Ingredients
Salad Base:
- 2 cups baby spinach or mixed greens
- 1 grilled chicken breast, sliced
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup grilled or pan-seared corn kernels
- 2 tbsp crumbled feta cheese
Chicken Marinade:
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
Optional Dressing:
- 1 tbsp olive oil
- 1 tsp balsamic vinegar or lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix the marinade ingredients. Coat chicken and marinate for at least 30 minutes.
- Grill chicken on medium-high heat for 6–7 minutes per side, or until cooked through. Let rest, then slice.
- Prepare vegetables: halve tomatoes, slice avocado, char corn if desired, and wash/dry greens.
- In a bowl, layer greens, then arrange sliced chicken, avocado, tomatoes, and corn on top.
- Sprinkle with feta cheese and drizzle with dressing if using.
