Ingredients

2 boneless skinless chicken breasts

2 tablespoons olive oil

1 lemon, juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried thyme

Salt and freshly ground black pepper to taste

1 cup plain Greek yogurt

1/2 cucumber, finely grated and squeezed dry

1 clove garlic, minced

1 tablespoon extra virgin olive oil

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh parsley

1 tablespoon lemon juice

Salt to taste

4 cups chopped romaine lettuce

1/2 cup sliced cucumber

1/2 cup sliced red onions

1/2 cup pitted Kalamata olives

1 tablespoon chopped fresh parsley


Instructions

1. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken and coat well. Marinate for 30 minutes to 2 hours.

2. Prepare tzatziki by combining Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, parsley, and salt. Mix and refrigerate.

3. Grill chicken on medium-high heat for 6–7 minutes per side until cooked through. Let rest 5 minutes, then cube or slice.

4. Arrange romaine lettuce in a bowl. Add sliced cucumber, red onions, and olives.

5. Top salad with grilled chicken. Spoon tzatziki over the top and garnish with parsley.

6. Serve immediately or with pita bread on the side.


Notes

Always squeeze out excess water from the cucumber before adding it to tzatziki to avoid a watery sauce.

Rest the grilled chicken before slicing to keep it juicy.
