Ingredients

2 boneless skinless chicken breasts

3 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1 cup Greek yogurt

1/2 cup cucumber, grated and drained

1 tablespoon fresh dill or mint, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1 head romaine lettuce, chopped

1/2 red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1/2 cup cucumber slices

1/4 cup Kalamata olives


Instructions

1. Grill or marinate the chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.

2. Grill chicken on medium-high heat for 6–7 minutes per side or until cooked through. Rest and slice.

3. Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill or mint, olive oil, salt, and pepper for the tzatziki. Chill.

4. Chop and prepare all the vegetables: romaine lettuce, red onions, cherry tomatoes, and cucumbers.

5. Assemble the salad by placing lettuce at the base, then arranging sliced chicken, vegetables, and olives around the bowl.

6. Top with a generous dollop of tzatziki sauce in the center.
