Ingredients
1 can (15 oz) white beans, rinsed and drained
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 red onion, thinly sliced
1/3 cup Kalamata olives, halved
1/2 cup feta cheese, crumbled
2 tablespoons fresh dill, chopped
3 tablespoons lemon juice
1 teaspoon lemon zest
3 tablespoons extra virgin olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
1. In a bowl, whisk together lemon juice, zest, olive oil, garlic, salt, pepper, and red pepper flakes.
2. Add the white beans to the dressing and stir gently. Let marinate for at least 30 minutes.
3. While marinating, prepare the cucumber, tomatoes, red onion, olives, dill, and feta.
4. Combine all ingredients in a large bowl and gently toss with the marinated beans.
5. Taste and adjust seasonings if needed.
6. Chill in the refrigerator for 15–20 minutes before serving.
