Ingredients

1 lb ground beef

1 medium yellow onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 packet taco seasoning (about 2 tablespoons)

1 tablespoon olive oil

2 cups shredded cheddar cheese

6 large flour tortillas

Salt and pepper to taste

1 tablespoon butter or more olive oil for pan-frying


Instructions

1. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3 minutes until softened.

2. Stir in minced garlic and cook for 30 seconds.

3. Add ground beef and cook until browned, breaking it apart with a spatula.

4. Drain excess grease. Stir in taco seasoning and a splash of water. Simmer for 2-3 minutes.

5. Add diced red bell pepper and cook for another 2-3 minutes until slightly tender. Season with salt and pepper.

6. Lay out tortillas and sprinkle cheese on half. Add beef filling, top with more cheese, and fold over.

7. Heat butter or oil in a skillet and cook quesadillas 2–3 minutes per side until golden and crispy.

8. Let rest for 1 minute before slicing into wedges. Serve warm with salsa, guacamole, or sour cream.


Notes

Shred your own cheese for the best melt and texture.

Don’t overfill the quesadillas to avoid leaks and uneven cooking.
