Ingredients

1 large cauliflower

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

½ teaspoon paprika

¾ cup shredded mozzarella cheese

¾ cup shredded sharp cheddar cheese

1 tablespoon chopped fresh parsley (optional)

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Remove leaves and trim the base of the cauliflower, keeping the core intact. Slice into ¾- to 1-inch thick steaks.

3. Place steaks and loose florets on the baking sheet.

4. Drizzle both sides with olive oil, then season with salt, pepper, garlic powder, and paprika.

5. Roast for 20–25 minutes, flipping halfway through, until tender and golden.

6. Sprinkle each steak with mozzarella and cheddar cheese.

7. Roast for another 5–7 minutes until the cheese is bubbly and golden.

8. Let cool slightly, garnish with parsley, and serve warm.

Notes

Choose a large, dense cauliflower head to get the best steak slices.

Use freshly shredded cheese for a better melt and texture.

Don’t overcrowd the baking sheet—airflow helps the edges crisp perfectly.
