Ingredients
24 chocolate sandwich cookies crushed
6 tablespoons unsalted butter melted
1 cup creamy peanut butter
8 ounces cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream cold
1 cup semi sweet chocolate chips
1/2 cup heavy cream for ganache
1 cup mini Reese’s peanut butter cups chopped
2 tablespoons chocolate shavings
Instructions
1. Crush the chocolate sandwich cookies into fine crumbs using a food processor or rolling pin.
2. Mix the crumbs with melted butter until evenly combined and press firmly into the bottom and slightly up the sides of an 8 or 9 inch springform pan. Chill in the freezer while preparing the filling.
3. Beat the softened cream cheese until completely smooth.
4. Add the peanut butter, powdered sugar, and vanilla extract and mix until light and fluffy.
5. In a separate bowl whip the cold heavy cream until stiff peaks form.
6. Gently fold the whipped cream into the peanut butter mixture to create a light mousse texture.
