Ingredients
6 hard-boiled eggs, chopped
2 medium ripe tomatoes, diced
1/4 cup red onion, finely chopped
1/2 sleeve saltine crackers, lightly crushed
1/3 cup mayonnaise
1 tablespoon fresh dill, chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
1. Place eggs in a saucepan, cover with water, and bring to a boil. Turn off the heat and let sit for 10-12 minutes. Transfer to an ice bath, peel, and chop.
2. Dice the tomatoes and let them drain briefly on paper towels if juicy. Finely chop the red onion and dill.
3. Lightly crush the saltine crackers with your hands or in a zip-top bag. Aim for bite-sized pieces, not crumbs.
4. In a large mixing bowl, combine the eggs, tomatoes, onion, and dill. Add crushed crackers.
5. Add the mayonnaise and gently fold until everything is evenly coated.
