Ingredients
2 lbs sweet potatoes (about 3 large), peeled and thinly sliced
2 cups heavy cream
4 garlic cloves, minced
1 tablespoon unsalted butter
0.5 cup grated Parmesan cheese
0.25 teaspoon ground nutmeg
1 teaspoon salt
0.5 teaspoon black pepper
1 tablespoon fresh thyme leaves
Fresh thyme sprigs or chopped parsley, optional garnish
Instructions
1. Peel the sweet potatoes and slice into 1/8-inch rounds using a mandoline or sharp knife.
2. In a saucepan, melt butter and sauté garlic for 1 minute.
3. Add cream, nutmeg, salt, pepper, and Parmesan. Simmer for 2–3 minutes.
4. Grease a 2-quart baking dish and layer half the sweet potatoes.
5. Pour half of the cream mixture and sprinkle half the thyme.
6. Repeat with remaining potatoes, cream, and thyme.
7. Cover with foil and bake at 375°F (190°C) for 30 minutes.
8. Remove foil, top with extra Parmesan, and bake for another 20–25 minutes.
9. Let rest for 10–15 minutes before serving.
Notes
Use a mandoline for perfectly even slices that cook uniformly.
For a cheesier dish, layer in some shredded Gruyère.
To make ahead, prepare up to 24 hours in advance and bake when ready.
