Ingredients
- 2 pounds (900g) baby potatoes or Yukon Gold potatoes, halved or quartered
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon dried rosemary or thyme
- Fresh parsley, chopped (optional garnish)
- Optional: 1 tablespoon grated Parmesan
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Rinse and thoroughly dry the potatoes. Cut into uniform halves or quarters.
- In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs until evenly coated.
- Spread potatoes cut-side down in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
- Remove from oven and garnish with chopped parsley and optional Parmesan.
