Ingredients

  • 2 pounds (900g) baby potatoes or Yukon Gold potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme
  • Fresh parsley, chopped (optional garnish)
  • Optional: 1 tablespoon grated Parmesan

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Rinse and thoroughly dry the potatoes. Cut into uniform halves or quarters.
  3. In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs until evenly coated.
  4. Spread potatoes cut-side down in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  6. Remove from oven and garnish with chopped parsley and optional Parmesan.
  7. Serve hot and enjoy!
