Ingredients
1 lb large shrimp, peeled and deveined (tails on)
3 tablespoons unsalted butter
1 tablespoon olive oil
4 cloves garlic, minced
1/3 cup freshly grated Parmesan cheese
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Instructions
1. Rinse the shrimp under cold water and pat completely dry.
2. Soak wooden skewers in water for 20–30 minutes if using.
3. Melt butter with olive oil over low heat, add garlic and cook until fragrant. Stir in lemon juice, salt, pepper, Italian seasoning, and red pepper flakes.
4. Coat shrimp with two-thirds of the garlic butter mixture and marinate 15–20 minutes.
5. Thread 4–5 shrimp onto each skewer.
6. Preheat grill to 375–400°F or oven to 400°F.
7. Cook 2–3 minutes per side, brushing with remaining garlic butter, until shrimp are opaque pink and reach 120–125°F internally.
8. Sprinkle Parmesan immediately after cooking and garnish with parsley before serving.
Notes
Do not overcook shrimp as they turn rubbery quickly.
Pat shrimp completely dry before marinating for best browning.
Add Parmesan after cooking to prevent burning.
