Ingredients

4 tablespoons butter

4 cloves garlic, minced

2 tablespoons all-purpose flour

1 cup heavy cream

1 cup parmesan cheese, freshly grated

1 teaspoon Italian seasoning

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: 1/4 teaspoon red pepper flakes or 1 tablespoon chopped fresh parsley


Instructions

1. Melt the butter in a medium saucepan over medium heat, swirling to avoid browning.

2. Add minced garlic and sauté for 1 minute until fragrant.

3. Sprinkle flour over the butter and garlic. Whisk constantly for 1–2 minutes until a light roux forms.

4. Slowly pour in the heavy cream, whisking to keep the mixture smooth.

5. Simmer for 3–5 minutes until the sauce thickens.

6. Reduce heat and stir in parmesan cheese until melted and glossy.

7. Season with Italian seasoning, salt, and black pepper. Add optional red pepper flakes or herbs if desired.

8. Simmer on low for another 2 minutes, then remove from heat.

Notes

For best texture, always use freshly grated parmesan — not pre-shredded or shelf-stable versions.

You can lighten the sauce by swapping half-and-half for heavy cream.

If the sauce thickens too much after cooling, reheat gently with a splash of milk to restore creaminess.
