Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1/4 cup breadcrumbs (optional, for extra crunch)
  • 2 tbsp olive oil
  • 8 oz rotini pasta
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Cut the chicken into bite-sized pieces and marinate with olive oil, garlic powder, onion powder, paprika, salt, pepper, and Parmesan. Add breadcrumbs if using.
  2. Cook rotini in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  3. In a skillet, sear the marinated chicken over medium-high heat until golden and fully cooked. Set aside.
  4. In the same pan, melt butter and sauté minced garlic for 30 seconds. Add cream and simmer for 2–3 minutes.
  5. Stir in Parmesan until smooth. Use pasta water to adjust the sauce’s consistency.
  6. Add cooked pasta to the sauce and toss to coat evenly.
  7. Serve with chicken bites on top or on the side. Garnish with parsley and extra Parmesan.
