Ingredients

1 large bunch curly kale, stems removed and leaves finely chopped

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

2 cloves garlic, finely grated or minced

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional)

1/3 cup grated Parmigiano-Reggiano cheese

1/2 cup fresh breadcrumbs

Zest of 1 lemon (optional)


Instructions

1. Wash the kale thoroughly and pat dry. Remove stems and finely chop the leaves.

2. Place kale in a large bowl and drizzle with 1 tablespoon olive oil and a splash of lemon juice. Massage the kale for 1-2 minutes until softened.

3. In a separate bowl, whisk the remaining olive oil, lemon juice, grated garlic, salt, pepper, and red pepper flakes until emulsified.

4. Pour the dressing over the kale and toss to coat. Let sit for 5-10 minutes.

5. Add grated parmesan and breadcrumbs. Toss lightly to combine.

6. Add lemon zest, extra parmesan or breadcrumbs if desired.

Notes
