Ingredients
3 to 4 lbs Beef Tenderloin (center-cut)
0.5 cup Unsalted Butter (softened)
4 to 5 cloves Fresh Garlic (minced)
1 tbsp Fresh Rosemary (chopped)
1 tbsp Fresh Thyme (chopped)
2 tsp Kosher Salt
1 tsp Freshly Ground Black Pepper
1 tbsp Olive Oil

Instructions
1. Trim and tie the beef tenderloin if needed, tucking the narrow end underneath to create an even thickness.
2. Mix softened butter, minced garlic, chopped rosemary and thyme, salt, and pepper in a small bowl until fully combined.
3. Pat the beef dry and rub it with olive oil. Sear all sides in a hot oven-safe skillet until browned, about 2–3 minutes per side.
4. Remove from heat and generously spread the garlic herb butter over the entire surface of the roast.
5. Roast in a preheated oven at 425°F (218°C) for 25–35 minutes or until the internal temperature reaches 125°F for medium-rare.
6. Remove from oven, tent loosely with foil, and let rest for 15 minutes before slicing into 1-inch medallions.
7. Serve warm and spoon any leftover pan butter over the slices.
