Garlic Chicken Stir Fry with Rice and Broccoli is a quick and flavorful dish featuring tender chicken strips, crisp vegetables, and a savory garlic-infused sauce, all served over fluffy white rice. Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1 tsp cornstarch
- 1/3 cup water
- 2 tbsp vegetable oil (divided)
- 3 cups cooked white rice
Instructions
- Slice the chicken into thin strips and set aside.
- In a small bowl, whisk together soy sauce, honey (or sugar), cornstarch, and water to make the sauce.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken in a single layer and cook for 4–5 minutes until golden and cooked through. Remove from pan.
- Add the remaining 1 tbsp oil and stir-fry the broccoli and bell pepper for 3–4 minutes until crisp-tender.
- Return the chicken to the pan, add minced garlic, and cook for 30 seconds until fragrant.
- Pour in the sauce, stir well, and cook for 1–2 minutes until the sauce thickens and everything is coated.
- Serve hot over cooked white rice.
