Ingredients

For the Chicken & Noodles:

  • Chicken Breast or Thighs: 1 lb, sliced into bite-sized pieces.
  • Lo Mein Noodles: 8 oz, cooked and drained.
  • Vegetable Oil: 2 tbsp.

For the Vegetables:

  • Bell Peppers: 1 large, sliced.
  • Carrots: 1 medium, julienned.
  • Snow Peas or Broccoli: 1 cup, chopped.
  • Green Onions: 1/2 cup, chopped (for garnish).

For the Garlic Sauce:

  • Garlic: 4 cloves, minced.
  • Soy Sauce: 1/4 cup.
  • Oyster Sauce: 2 tbsp.
  • Hoisin Sauce: 1 tbsp.
  • Sesame Oil: 1 tsp.
  • Brown Sugar: 1 tbsp.
  • Cornstarch: 1 tsp mixed with 2 tbsp water.
  • Sesame Seeds: 1 tbsp (optional).

Instructions

  1. Cook the Noodles: Boil noodles according to package instructions until al dente. Drain and rinse with cold water. Set aside.
  2. Prepare the Sauce: In a bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, and cornstarch slurry. Set aside.
  3. Cook the Chicken: Heat oil in a wok over high heat. Add chicken and stir-fry for 5-6 minutes until cooked through. Remove and set aside.
  4. Stir-Fry Vegetables: In the same wok, stir-fry bell peppers, carrots, and snow peas for 3-4 minutes.
  5. Add Garlic & Sauce: Add minced garlic and cook for 30 seconds. Pour in the sauce and simmer until thickened.
  6. Combine & Toss: Add the chicken and noodles back to the wok, tossing to coat evenly.
  7. Garnish & Serve: Top with green onions and sesame seeds. Serve hot.
