Ingredients
For the Chicken & Noodles:
- Chicken Breast or Thighs: 1 lb, sliced into bite-sized pieces.
- Lo Mein Noodles: 8 oz, cooked and drained.
- Vegetable Oil: 2 tbsp.
For the Vegetables:
- Bell Peppers: 1 large, sliced.
- Carrots: 1 medium, julienned.
- Snow Peas or Broccoli: 1 cup, chopped.
- Green Onions: 1/2 cup, chopped (for garnish).
For the Garlic Sauce:
- Garlic: 4 cloves, minced.
- Soy Sauce: 1/4 cup.
- Oyster Sauce: 2 tbsp.
- Hoisin Sauce: 1 tbsp.
- Sesame Oil: 1 tsp.
- Brown Sugar: 1 tbsp.
- Cornstarch: 1 tsp mixed with 2 tbsp water.
- Sesame Seeds: 1 tbsp (optional).
Instructions
- Cook the Noodles: Boil noodles according to package instructions until al dente. Drain and rinse with cold water. Set aside.
- Prepare the Sauce: In a bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, and cornstarch slurry. Set aside.
- Cook the Chicken: Heat oil in a wok over high heat. Add chicken and stir-fry for 5-6 minutes until cooked through. Remove and set aside.
- Stir-Fry Vegetables: In the same wok, stir-fry bell peppers, carrots, and snow peas for 3-4 minutes.
- Add Garlic & Sauce: Add minced garlic and cook for 30 seconds. Pour in the sauce and simmer until thickened.
- Combine & Toss: Add the chicken and noodles back to the wok, tossing to coat evenly.
- Garnish & Serve: Top with green onions and sesame seeds. Serve hot.
