Ingredients
1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
1 ½ tsp kosher salt
1 tsp freshly ground black pepper
1 tbsp olive oil (for searing)
3 tbsp unsalted butter
4 garlic cloves, minced or grated
1 tbsp fresh parsley, finely chopped (optional)
12 oz rotini pasta
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
1 ½ cups heavy cream
¾ cup grated Parmesan cheese
1 tbsp Cajun seasoning
½ tsp smoked paprika
Salt and pepper to taste
Fresh chopped parsley (for garnish)
Optional: A dash of hot sauce or cayenne pepper
Instructions
1. Pat the steak cubes dry with paper towels and season with kosher salt and black pepper. Set aside.
2. Bring a large pot of salted water to a boil. Cook the rotini until al dente, reserve ½ cup of pasta water, then drain.
3. In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil. Sauté 3 minced garlic cloves for 30 seconds.
4. Add the heavy cream, then whisk in Parmesan cheese, Cajun seasoning, smoked paprika, salt, and pepper. Simmer until smooth.
5. Add the drained pasta to the sauce and toss to coat. Add reserved pasta water if needed for desired consistency.
6. In a separate hot skillet, heat 1 tablespoon of olive oil. Sear steak cubes in batches for 1.5–2 minutes per side until browned.
7. Reduce heat, add 3 tablespoons butter and 4 cloves minced garlic to the steak. Stir until melted and aromatic.
8. Return all steak bites to the pan and toss to coat in garlic butter for 1 minute.
9. Plate the creamy pasta and top with the garlic butter steak bites. Garnish with parsley and black pepper.
10. Serve immediately and enjoy hot.
Notes
Let the steak rest for 2–3 minutes after searing to retain juices.
For a lighter version, use half-and-half instead of heavy cream—but expect a thinner sauce.
Don’t skip reserving pasta water; it helps achieve the perfect creamy Alfredo texture.
