Ingredients
1 lb sirloin steak, cut into bite-sized pieces
10 oz cheese tortellini (refrigerated or frozen)
3 tbsp butter
3 cloves garlic, minced
1 tbsp olive oil
1 cup heavy cream
¾ cup grated Parmesan cheese
1 tsp salt
½ tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Cut the steak into bite-sized cubes, pat dry with paper towels, and season with salt and pepper.
2. Boil the tortellini in salted water according to package instructions. Drain and set aside.
3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add steak bites in a single layer and sear for 2–3 minutes per side until golden brown. Remove from skillet and set aside.
4. Lower the heat to medium. Add remaining butter and minced garlic to the skillet and cook for 30 seconds, just until fragrant.
5. Return the steak bites to the skillet and toss them in the garlic butter. Turn off the heat and sprinkle with fresh parsley.
6. In a separate saucepan, simmer the heavy cream over medium heat. Add grated Parmesan and stir continuously until the sauce is thick and smooth.
7. Add cooked tortellini to the sauce, gently mixing to coat. Simmer for 1–2 minutes and season with salt and pepper to taste.
8. Plate the tortellini and top with garlic butter steak bites. Spoon extra sauce or butter over the top and serve hot.
Notes
Let the steak rest at room temperature for 20–30 minutes before cooking to ensure even searing.
Avoid boiling the cream sauce—keep it at a gentle simmer to prevent separation.
Grate your own Parmesan for the smoothest, most flavorful sauce.
