Ingredients

1.5 lbs sirloin steak (or ribeye, New York strip), cut into 1-inch cubes

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1 tbsp olive oil

4 tbsp unsalted butter

5 garlic cloves, minced

2 tbsp fresh parsley, finely chopped

Optional: Red pepper flakes


Instructions

1. Remove the steak from the fridge 20–30 minutes before cooking to bring it to room temperature.

2. Pat the steak cubes dry thoroughly with paper towels.

3. Season the steak evenly with salt, pepper, and smoked paprika.

4. Heat a cast iron skillet or heavy pan over medium-high heat until very hot.

5. Add olive oil and swirl to coat the skillet.

6. Sear the steak in a single layer without crowding the pan, cooking about 2 minutes per side. Work in batches if needed.

7. Once seared, reduce heat to low and add the butter to the skillet.

8. Stir in minced garlic and cook for 30 seconds until fragrant.

9. Return all steak bites to the pan, tossing in the garlic butter for 1–2 minutes.

10. Sprinkle with fresh parsley and optional red pepper flakes, then serve hot.


Notes

Always dry the steak before cooking for the best sear.

Use a heavy skillet like cast iron to get the best caramelization.

Add garlic after reducing heat to avoid burning and bitterness.
