Description

The Garlic Butter Shrimp & Veggie Mash Bowl is a cozy, restaurant-style dish made for weeknight ease and weekend comfort. It features succulent shrimp sautéed in garlic butter, creamy mashed potatoes, and vibrant green peas, all brightened with fresh lemon and herbs. It’s an irresistible combination of flavor and comfort that comes together in under 30 minutes.


Ingredients

For the Garlic Butter Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Juice of 1/2 lemon
  • 1 tsp olive oil

For the Mashed Potatoes:

  • 1 1/2 lbs russet or Yukon gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/3 cup milk or cream
  • Salt and pepper, to taste

For the Green Peas:

  • 1 cup green peas (fresh or frozen)

Garnish:

  • Lemon slices
  • Chopped parsley or dill (optional)

Instructions

  1. Boil the cubed potatoes in salted water for 12–15 minutes until fork-tender. Drain and return to pot.
  2. Add butter and warm milk to the potatoes. Mash until smooth and season with salt and pepper. Set aside.
  3. Blanch or steam peas until tender. Season lightly with salt.
  4. Pat shrimp dry and season with salt, pepper, paprika, and red pepper flakes.
  5. In a skillet, heat olive oil and 1 tbsp butter. Add shrimp in a single layer and cook 1.5–2 minutes per side.
  6. Add garlic and remaining butter. Stir and cook for another 30 seconds.
  7. Squeeze lemon juice over shrimp and remove from heat.
  8. Assemble bowl with mashed potatoes, peas, and shrimp. Drizzle garlic butter from pan over the top.
  9. Garnish with lemon slices and fresh herbs.
