Ingredients
450g boneless skinless chicken breast
2 tablespoons salted butter
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
300g rotini or other twisted pasta
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the twisted pasta until al dente. Drain and set aside.
2. Cut chicken into bite-sized pieces and pat dry. Season with Cajun seasoning, salt, and black pepper.
3. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high. Sear the chicken for 4–5 minutes without moving, flip, and cook another 3–4 minutes until golden and cooked through. Remove and set aside.
