1 pound ground beef

1 medium yellow onion, diced

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

1 (10 oz) can diced tomatoes with green chiles

1 (15 oz) can kidney beans, drained and rinsed

1 teaspoon salt

1/2 teaspoon black pepper

2 cups shredded cheddar cheese

4 cups Fritos corn chips

Optional toppings: sour cream, jalapeños, green onions, cilantro


Instructions

1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.

2. Add diced onion and minced garlic to the skillet. Sauté for 3–4 minutes until onions are soft and fragrant.

3. Stir in chili powder, cumin, salt, and pepper. Add diced tomatoes with green chiles and kidney beans. Simmer for 10 minutes to meld flavors.

4. Preheat oven to 350°F (175°C). In a 9×13-inch baking dish, layer Fritos chips on the bottom.

5. Spoon the beef and bean mixture over the chips evenly.

6. Sprinkle shredded cheddar cheese generously over the top.

7. Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.

8. Remove from oven and let rest for 5 minutes.
