Ingredients

1 lb ground beef

4 cups shredded green cabbage

1 medium onion, diced

2 cloves garlic, minced

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tbsp chili powder

1 can (14.5 oz) diced tomatoes

1 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar cheese

1 cup crushed Fritos corn chips


Instructions

1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease.

2. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

3. Add the tomato paste, Worcestershire sauce, chili powder, salt, and black pepper. Stir well and cook for 1 to 2 minutes.

4. Add the shredded cabbage and stir everything together. Cook for 10 to 12 minutes, stirring occasionally, until the cabbage becomes tender.

5. Pour in the diced tomatoes with their juices and stir well. Let the mixture simmer for 5 minutes so the flavors combine.

6. Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet for 1 to 2 minutes until the cheese melts.

7. Top with crushed Fritos just before serving and serve hot.


Notes

Add the Fritos only right before serving so they stay crunchy.

For a lighter version, use ground turkey instead of ground beef.

Do not overcook the cabbage because it should stay tender, not mushy.
