Ingredients

12 cups cubed brioche or challah bread

5 large eggs

1 1/2 cups whole milk

1/2 cup heavy cream

1/4 cup granulated sugar

2 tablespoons brown sugar

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 tablespoons unsalted butter, melted

Maple syrup, for drizzling

Powdered sugar, for dusting

Fresh strawberries, blueberries, raspberries (for topping)

Whipped cream or Greek yogurt (for serving)

Instructions

1. Cut the brioche or challah into small, even 1-inch cubes.

2. In a mixing bowl, whisk together eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt.

3. Toss the bread cubes into the custard and let soak for 10–15 minutes.

4. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin generously.

5. Fill muffin cups with soaked bread, pressing gently to compact.

6. Bake for 25–30 minutes until golden brown and set in the center.

7. Let cool for 5 minutes, then remove carefully with a knife or spatula.

8. Top with whipped cream or yogurt, drizzle with syrup, add berries, and dust with powdered sugar.

Notes

Use day-old bread for best texture; fresh bread can become mushy.

Don’t skip greasing the muffin tin thoroughly — it’s key to easy removal.

You can prepare the cups in advance and bake them fresh in the morning.
