Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil (plus more for searing)
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 4 slices provolone cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, melt butter with olive oil.
  2. Add sliced onions and cook, stirring occasionally, for 25–30 minutes until golden and caramelized.
  3. Stir in garlic and cook for another minute.
  4. While onions cook, season chicken with salt and pepper.
  5. In another skillet, sear chicken breasts in olive oil for 3–4 minutes per side until golden.
  6. Add beef broth to onions, scraping up browned bits, and simmer to reduce slightly.
  7. Preheat oven to 375°F (190°C).
  8. In a baking dish, lay out chicken breasts.
  9. Pour onion-broth mixture over the chicken.
  10. Top each piece with a slice of provolone cheese.
  11. Bake for 20–25 minutes until chicken is cooked through and cheese is melted.
  12. Garnish with fresh parsley and serve.
