Ingredients
- 4 boneless, skinless chicken breasts
- 3 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil (plus more for searing)
- 2 cloves garlic, minced
- 1 cup beef broth
- 4 slices provolone cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, melt butter with olive oil.
- Add sliced onions and cook, stirring occasionally, for 25–30 minutes until golden and caramelized.
- Stir in garlic and cook for another minute.
- While onions cook, season chicken with salt and pepper.
- In another skillet, sear chicken breasts in olive oil for 3–4 minutes per side until golden.
- Add beef broth to onions, scraping up browned bits, and simmer to reduce slightly.
- Preheat oven to 375°F (190°C).
- In a baking dish, lay out chicken breasts.
- Pour onion-broth mixture over the chicken.
