1 lb ground beef

2 large yellow onions, thinly sliced

2 tablespoons butter

2 cloves garlic, minced

1/2 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon balsamic vinegar

1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)

Salt, to taste

Black pepper, to taste

4 slices Gruyère or provolone cheese

4 brioche buns

Fresh parsley, chopped (optional for garnish)


Instructions

1. Melt butter in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook for 25–30 minutes, stirring occasionally, until deeply caramelized.

2. Push onions to one side of the skillet and add ground beef. Cook until browned, about 6–8 minutes. Combine with onions.

3. Stir in garlic, Worcestershire sauce, balsamic vinegar, and thyme. Cook for 2 more minutes.

4. Pour in beef broth, bring to a simmer, and reduce heat. Let the mixture cook for 5–10 minutes until thickened. Season with salt and pepper.

5. Lightly butter brioche buns and toast them in a skillet or under the broiler until golden.
