Ingredients

34 lbs chuck roast

2 tablespoons olive oil

2 cups beef broth

1 large onion, chopped

4 garlic cloves, minced

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1/2 cup red wine (optional)

2 bay leaves

34 sprigs fresh thyme

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Pat the chuck roast dry and season generously with salt and pepper.

2. Heat olive oil in a Dutch oven or skillet. Sear the roast on all sides until browned.

3. Remove the beef. Add onions to the same pot and cook until softened.

4. Stir in garlic and tomato paste. Cook for 1–2 minutes until fragrant.

5. Pour in red wine to deglaze the pan. Let it reduce slightly.

6. Add beef broth and Worcestershire sauce. Stir well.

7. Return the beef to the pot. Add bay leaves and thyme.

8. Cover and cook on low in a slow cooker for 8 hours or in a 300°F oven for 3.5–4 hours.

9. When beef is fork-tender, transfer it to a board and shred it.

10. Discard bay leaves and thyme. Return shredded beef to the pot, stir, and serve.


Notes

Always sear the meat first to lock in flavor and caramelization.

This dish tastes even better the next day after the flavors deepen overnight.

For leaner results, refrigerate and skim off the fat before reheating.
