Ingredients

16 oz cream cheese, softened

1 cup mixed green and black olives, chopped

1/2 cup peppadew peppers or roasted red peppers, chopped

1/2 cup shredded mozzarella or provolone cheese

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh rosemary, minced (plus extra for garnish)

1 small garlic clove, minced (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Let the cream cheese sit at room temperature for 30 minutes until softened.

2. Chop the olives, peppers, shredded cheese, parsley, and garlic if using. Reserve a small portion of each for garnish.

3. In a bowl, mix the softened cream cheese with chopped ingredients, salt, and pepper until well combined.

4. Transfer mixture to plastic wrap and shape into a log. Wrap tightly and refrigerate for at least 1 hour.

5. Once chilled, unwrap and place on a serving board. Decorate with reserved toppings and rosemary sprigs.

6. Serve with crostini, crackers, or fresh vegetables.

7. Store leftovers in the fridge wrapped tightly for up to 5 days.

Notes

Make sure to drain your olives and peppers well to prevent excess moisture in the log.

Chill for at least one hour before serving to ensure it slices cleanly and holds its shape.

Save some toppings for garnish after chilling—it adds color and makes it look professionally styled.
