Ingredients

12 fresh lasagna sheets

2 cups ricotta cheese

1 cup grated Parmesan cheese

1 ½ cups shredded mozzarella cheese

5 cups fresh spinach

1 pinch ground nutmeg

1 large egg

1 teaspoon salt

½ teaspoon black pepper

2 cloves garlic, minced

1 tablespoon olive oil

3 cups marinara sauce

Fresh basil leaves, for garnish


Instructions

1. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add spinach and sauté until wilted. Drain and squeeze out all excess liquid, then chop finely.

2. In a bowl, combine chopped spinach, ricotta, Parmesan, egg, nutmeg, salt, and pepper. Mix until creamy and uniform.

3. Bring a large pot of salted water to boil. Cook lasagna sheets for 1-2 minutes until pliable. Lay flat on a kitchen towel to cool slightly.

4. Spread 2 tablespoons of filling over each lasagna sheet, roll tightly, and place seam-side down in a sauce-lined baking dish.

5. Pour remaining marinara over the rolls and top with mozzarella and more Parmesan.

6. Cover with foil and bake at 375°F (190°C) for 20 minutes. Uncover and bake an additional 10-15 minutes until bubbly and golden.

7. Let rest 5-10 minutes before garnishing with basil and serving.


Notes

Drain your spinach well to prevent a watery filling.
