Ingredients
250g mascarpone cheese
200ml heavy cream
60g powdered sugar
1 tsp vanilla extract
150g dark chocolate (60–70% cocoa)
20g cocoa powder
10g gelatin (sheets or powder)
100g glucose syrup (or corn syrup)
120g granulated sugar
90ml water
30g unsalted butter (for glaze)
120g digestive biscuits or graham crackers
60g unsalted butter (melted, for base)
Optional: chocolate disks
Optional: fresh mint leaves
Instructions
1. Crush digestive biscuits into fine crumbs and mix with melted butter. Press into small rounds for the base and refrigerate until firm.
2. In a bowl, combine mascarpone, powdered sugar, and vanilla until smooth.
3. Whip heavy cream to soft peaks and gently fold into mascarpone mixture.
4. Pipe the filling into silicone half-sphere molds, leaving a bit of room at the top.
5. Press the chilled biscuit base on top of each filled mold and freeze for 4–6 hours or overnight.
6. Bloom gelatin in cold water. Heat water, sugar, and glucose in a saucepan until dissolved.
7. Remove from heat and stir in gelatin, cocoa powder, and chopped dark chocolate. Mix until smooth. Add butter and blend until glossy.
8. Let glaze cool to 90–95°F (32–35°C).
9. Unmold the domes and place on a rack. Pour glaze evenly over each frozen dome and let excess drip off.
10. Transfer to serving plates, garnish with chocolate disks or mint, and refrigerate until ready to serve.
