Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
1 packet unflavored gelatin (2 1/4 teaspoons)
3 tablespoons cold water
1 1/2 cups eggnog
1/4 cup granulated sugar
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1 pinch salt
1 1/2 cups heavy whipping cream, cold
1 amount whipped cream, for topping
1 amount ground cinnamon or nutmeg, for garnish
Instructions
1. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly combined, then press about 2 tablespoons into the base of each serving glass. Chill in the fridge.
2. Bloom the gelatin by sprinkling it over cold water and letting it sit for 5 to 10 minutes.
3. Warm the eggnog in a saucepan over medium-low heat. Add sugar, nutmeg, vanilla, and salt. Stir until dissolved, then whisk in the bloomed gelatin. Let cool to room temperature.
4. In a separate bowl, whip the heavy cream until stiff peaks form.
5. Fold the cooled eggnog mixture gently into the whipped cream until smooth.
6. Spoon or pipe the mousse over the crust layer in each glass. Smooth the tops and chill for at least 4 hours or overnight.
7. Before serving, top with whipped cream and a dusting of cinnamon or nutmeg.
8. Serve chilled and enjoy.
Notes
Make sure the eggnog mixture is completely cooled before folding in the whipped cream to keep the mousse light and airy.
For extra festive flavor, use spiced or homemade eggnog.
These mousse cups can be made up to a day in advance and kept chilled until ready to serve.
