Ingredients

1 lb boneless skinless chicken breasts, cut into cubes

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

2 cups cooked white rice

Salt to taste

1 cup sweet corn

1 teaspoon butter

Pinch of chili powder

1/2 cup sour cream or Greek yogurt

1 tablespoon mayonnaise

Juice of 1/2 lime

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon chopped cilantro

Fresh chopped cilantro

Lime wedges

Crumbled cotija or feta cheese (optional)

Instructions

1. In a mixing bowl, combine cubed chicken with olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Toss well to coat and let marinate for at least 15 minutes.

2. In a small bowl, whisk together sour cream or Greek yogurt, mayo, lime juice, garlic powder, salt, pepper, and chopped cilantro. Chill while preparing the rest.

3. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 6–8 minutes, turning occasionally, until cooked through and slightly charred.

4. Sauté corn in a small pan with butter and chili powder for 2–3 minutes to enhance flavor.

5. Warm the rice if using pre-cooked. Divide it among serving bowls.

6. Top each bowl with grilled chicken, corn, and a generous drizzle of creamy sauce. Garnish with lime wedges, cilantro, and optional cheese.

7. Serve immediately and enjoy your flavorful street corn chicken rice bowl!

Notes

Always preheat your skillet to get a nice sear on the chicken without drying it out.

Let the sauce sit in the fridge while cooking—it helps the flavors develop.

Use freshly squeezed lime juice for a brighter, fresher taste throughout the dish.
