Ingredients

1.5 lbs boneless skinless chicken breast, cut into bite-sized cubes

2 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

½ tsp onion powder

1 tsp Italian seasoning

½ tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional)

8 oz rotini pasta

2 tbsp unsalted butter

4 cloves garlic, minced

1½ cups heavy cream

¾ cup grated parmesan cheese

½ tsp black pepper

Salt to taste

1 tbsp chopped fresh parsley


Instructions

1. In a bowl, combine chicken cubes with olive oil, smoked paprika, garlic powder, onion powder, Italian seasoning, salt, pepper, and red pepper flakes. Mix well and let marinate for 10 minutes.

2. Boil salted water in a medium saucepan and cook rotini pasta until al dente. Reserve ½ cup of pasta water, then drain and set aside.

3. Heat a large skillet over medium-high heat. Add chicken in a single layer and sear 4–5 minutes per side until golden and cooked through. Remove from skillet and set aside.

4. Lower heat to medium. Add butter and garlic to the same skillet. Sauté for 1–2 minutes until fragrant.

5. Pour in heavy cream, bring to a simmer, then stir in parmesan cheese and pepper. Simmer until creamy and smooth. Use reserved pasta water to thin if needed.

6. Add cooked pasta to the sauce and toss to coat evenly. Simmer 1–2 more minutes to absorb flavor.

7. Serve pasta on a plate and top with chicken bites. Garnish with parsley and extra parmesan.
