Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar (plus 1/4 cup for rolling)
  • 2 large eggs
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1 1/2 cups sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to the butter mixture and mix until just combined.
  6. In a small bowl, mix 1/4 cup sugar with 2 teaspoons cinnamon.
  7. Scoop tablespoon-sized balls of dough, roll them in the cinnamon sugar mixture.
  8. Place on prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 8 to 10 minutes until edges are set but centers are soft.
  10. Cool on baking sheet for 2 minutes, then transfer to wire rack.
