A quick and comforting one-pan meal where cheesy tortellini, smoky kielbasa, and juicy cherry tomatoes roast together with olive oil, garlic, and fresh basil—finished with a generous dusting of parmesan. It’s weeknight magic with minimal cleanup.
Ingredients
- 18 oz refrigerated cheese tortellini
- 14 oz kielbasa sausage, sliced into rounds
- 1 pint cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup grated parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 425°F (220°C) and line a large sheet pan with parchment or lightly grease it.
- In a large bowl, combine tortellini, kielbasa, cherry tomatoes, garlic, olive oil, salt, and pepper. Toss until evenly coated.
- Spread the mixture in a single layer on the prepared sheet pan.
- Roast for 20–25 minutes, stirring once halfway through, until the tortellini is crisp and the sausage is browned.
- Remove from oven and top with grated parmesan and fresh basil.
- Serve warm and enjoy.
