Ingredients

1 pound ground pork sausage

1 large onion, finely chopped

2 celery stalks, diced

2 medium apples, peeled and diced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

1/4 cup fresh parsley, chopped

8 cups day-old bread, cubed

1/2 cup unsalted butter

1 1/2 to 2 cups low-sodium chicken broth

Salt and pepper to taste

1/4 teaspoon ground sage (optional)

Instructions

1. Cube the bread into bite-sized pieces and toast in a 300°F oven for 10–15 minutes until lightly crispy.

2. In a large skillet, brown the sausage over medium heat, breaking it into crumbles. Transfer to a bowl and reserve the drippings.

3. Add butter, chopped onion, and celery to the skillet. Sauté for 5 minutes, then add apples and cook for 3–5 minutes more. Stir in herbs.

4. In a large mixing bowl, combine bread cubes, sausage, and sautéed mixture. Gradually mix in 1 1/2 to 2 cups broth until moist but not soggy.

5. Season with salt and pepper to taste.

6. Transfer the stuffing mixture to a greased 9×13 inch baking dish. Cover with foil.

7. Bake at 350°F for 30 minutes, then uncover and bake for 15–20 minutes until the top is golden and crisp.

8. Let rest for 5–10 minutes before serving.

Notes

Use day-old or oven-toasted bread to prevent a soggy texture.

Taste and adjust seasoning before baking to accommodate sausage and broth salt levels.

For added flavor, mix in toasted nuts or dried cranberries.
