Ingredients
- 1 bunch of curly kale (6–8 cups), stems removed and chopped
- 1 medium cucumber, diced
- 1 large carrot, peeled and shredded or julienned
- ¼ red onion, finely chopped
- 1–2 tablespoons olive oil (for massaging kale)
- 1 lemon, juiced (plus wedges for garnish)
- 1 clove garlic, minced or grated
- ½ teaspoon Dijon mustard (optional)
- Salt and black pepper, to taste
- Optional: crumbled feta, dried cranberries, chickpeas, sunflower seeds
Instructions
- Wash and dry the kale thoroughly. Remove stems and chop into bite-sized pieces.
- Place kale in a large bowl, drizzle with olive oil and a pinch of salt. Massage for 2–3 minutes until soft.
- Dice cucumber, shred or julienne the carrot, and finely chop red onion. Add to the kale.
- In a small bowl, whisk lemon juice, garlic, Dijon mustard (if using), olive oil, salt, and pepper.
- Pour dressing over the salad and toss well to combine.
- Let rest for 10–15 minutes before serving. Garnish with lemon wedges or optional toppings.
