3 medium apples (Golden Delicious or Granny Smith), peeled, cored, and chopped

2 tablespoons lemon juice

3 large eggs, room temperature

3/4 cup granulated sugar

1/2 cup whole milk, room temperature

1/2 cup sunflower oil or light olive oil

1 teaspoon pure vanilla extract

Zest of 1 lemon

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

Powdered sugar for dusting (optional)


Instructions

1. Peel, core, and chop the apples into small chunks. Toss with lemon juice to prevent browning.

2. Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.

3. In a large bowl, whisk eggs and sugar until pale and fluffy, about 2–3 minutes.

4. Add milk, oil, vanilla extract, and lemon zest. Whisk to combine.

5. Sift in flour, baking powder, and salt. Fold until just combined.

6. Reserve a few apple pieces; fold the rest into the batter gently.

7. Pour batter into the prepared pan and top with reserved apple chunks.
