Ingredients
- 1 lb ground beef (85-90% lean)
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup frozen corn (optional)
- 1 cup frozen peas (optional)
- 1 can (14.5 oz) diced tomatoes (with juice)
- 6 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups egg noodles (or preferred pasta)
- Optional garnish: chopped parsley, grated Parmesan
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease if necessary.
- Add diced onion and sauté for 2–3 minutes. Stir in garlic, carrots, and celery. Cook an additional 4–5 minutes.
- Pour in diced tomatoes and beef broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Let the soup simmer for 10–15 minutes to develop flavor and soften vegetables.
- Add noodles and cook for 8–10 minutes or until al dente.
- Stir in frozen peas and corn during the last few minutes of cooking.
