Ingredients

  • 1 lb ground beef (85-90% lean)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen corn (optional)
  • 1 cup frozen peas (optional)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 6 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups egg noodles (or preferred pasta)
  • Optional garnish: chopped parsley, grated Parmesan

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease if necessary.
  2. Add diced onion and sauté for 2–3 minutes. Stir in garlic, carrots, and celery. Cook an additional 4–5 minutes.
  3. Pour in diced tomatoes and beef broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Let the soup simmer for 10–15 minutes to develop flavor and soften vegetables.
  5. Add noodles and cook for 8–10 minutes or until al dente.
  6. Stir in frozen peas and corn during the last few minutes of cooking.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with parsley or Parmesan if desired.
