3 cups cooked chickpeas (or 2 cans, drained and rinsed)

Instructions
1. Heat olive oil in a large soup pot or Dutch oven over medium heat. Add the chopped onion and sliced carrots. Sauté for about 6–8 minutes, until softened and translucent.
