Ingredients

12 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

6 cloves garlic, minced

3 tbsp olive oil

1/2 tsp red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

1 lemon, zested and juiced

1/3 cup grated Parmesan cheese

Salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Reserve 1 cup of pasta water, then drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant.

3. Add the shrimp in a single layer. Season with salt, pepper, and red pepper flakes. Cook 1-2 minutes per side until pink and cooked through. Remove shrimp and set aside.

4. Add the cooked pasta to the skillet with garlic oil. Toss to coat and splash in reserved pasta water to loosen if needed. Stir in lemon zest and juice.

5. Return shrimp to the skillet and combine everything. Add parsley and Parmesan. Toss gently.

6. Serve immediately with extra Parmesan, lemon wedges, and a sprinkle of chili flakes if desired.


Notes

Always dry the shrimp before cooking to get a good sear.

Don’t skip the reserved pasta water—it creates the perfect light sauce.

Fresh lemon juice at the end really lifts the whole dish.
