Ingredients
500g boneless skinless chicken thighs or breasts
300g spaghetti or fettuccine pasta
4 cloves garlic minced
3 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
3/4 cup grated Parmesan cheese
2 teaspoons Cajun seasoning (adjust to taste)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley chopped
Instructions
1. Cut the chicken into bite-sized pieces and pat them dry. Season with salt, pepper, and a bit of Cajun seasoning.
2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
3. Add chicken in a single layer and cook 4–5 minutes per side until golden and cooked through.
4. During the last minute of cooking, add the garlic and sauté until fragrant. Remove the chicken and set aside.
5. Meanwhile, cook the pasta in salted boiling water until al dente. Drain and reserve some pasta water.
6. In the same skillet, lower heat and melt the remaining butter. Add heavy cream and bring to a gentle simmer.
7. Stir in Parmesan cheese and Cajun seasoning. Simmer for 5–7 minutes until thickened. Season with salt and pepper.
8. Add the cooked pasta to the sauce and toss to coat. Add reserved pasta water if needed to loosen the sauce.
9. Serve pasta topped with garlic butter chicken bites. Garnish with chopped parsley and a crack of black pepper.
Notes
For extra flavor, marinate the chicken in Cajun seasoning and olive oil for 15–30 minutes before cooking.
Always grate Parmesan fresh—it melts and blends into the sauce more smoothly than pre-shredded cheese.
If using chicken breast, be careful not to overcook—remove from heat as soon as it’s just done to keep it juicy.
