Ingredients

1 lb ground beef

1 medium yellow onion, finely chopped

1 cup uncooked white rice or 2½ cups cooked rice

10.5 oz can French onion soup

10.5 oz can cream of mushroom soup

1½ cups shredded mozzarella cheese, divided

½ cup sour cream

1 tsp garlic powder

½ tsp black pepper

1 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)


Instructions

1. If using uncooked rice, cook according to package directions. Fluff and set aside.

2. In a large skillet, heat olive oil over medium-high. Add ground beef and cook until browned, about 6–8 minutes. Drain excess grease.

3. In the same pan, sauté chopped onions until soft and translucent, about 5–6 minutes.

4. In a large bowl, mix together rice, cooked beef, sautéed onions, French onion soup, cream of mushroom soup, garlic powder, black pepper, sour cream, and ¾ cup of mozzarella.

5. Grease a 9×13-inch baking dish and spread the mixture evenly inside. Top with the remaining ¾ cup of mozzarella cheese.

6. Cover the dish with foil and bake at 350°F (175°C) for 20 minutes. Remove foil and bake another 10–15 minutes until the top is golden and bubbly.

7. Let rest for 5 minutes. Garnish with parsley and serve warm.


Notes

Make ahead and refrigerate for up to 24 hours—add 10extra minutes to bake time.

Mix part of the cheese inside the filling to avoid separation and boost creaminess.

Use cooked day-old rice to prevent mushy texture in the final bake.
