Ingredients

  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3/4 cup buttermilk (plus more if needed)

  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Add cold cubed butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Pour in buttermilk and stir until just combined. If the dough seems too dry, add a splash more buttermilk.
  5. Fold in any optional add-ins if using.
  6. Drop heaping spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12–15 minutes, or until tops are lightly golden.
