This Easy Chicken with Zucchini, Corn & Garlic Sauce is a quick and flavorful dinner that brings together golden seared chicken breasts, tender zucchini, and sweet corn, all draped in a rich, buttery garlic sauce. Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp garlic powder
For the Vegetables:
- 2 medium zucchinis, sliced
- 1½ cups corn kernels (fresh, frozen, or canned)
- 1 tbsp olive oil
- Salt and pepper to taste
For the Garlic Sauce:
- 2 tbsp butter
- 4 garlic cloves, minced or grated
- 1 tbsp all-purpose flour
- ¾ cup chicken broth
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- Chopped fresh parsley (optional)
Instructions
- Pat chicken dry and season with salt, pepper, garlic powder, and paprika.
- Heat 1 tbsp olive oil in a large skillet. Cook chicken breasts for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add 1 tbsp olive oil. Sauté zucchini for 3-4 minutes, then add corn and cook another 2-3 minutes. Season lightly.
- Lower heat. Melt butter in the skillet, add garlic, and cook for 30 seconds.
- Stir in flour and cook 1 minute. Gradually whisk in chicken broth until smooth and thickened.
- Add Dijon mustard and lemon juice. Stir well.
- Return chicken and vegetables to the pan. Simmer 1-2 minutes to meld flavors.
- Garnish with chopped parsley and serve hot.
