Ingredients

8 oz lo mein noodles

1 lb boneless skinless chicken breast, sliced

1 red bell pepper, thinly sliced

1 cup snow peas

1 small carrot, julienned

2 green onions, sliced

2 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp vegetable oil

1/4 cup low sodium soy sauce

2 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

1 tsp cornstarch

1 tbsp brown sugar

2 tbsp water


Instructions

1. Cook the lo mein noodles according to package instructions until just shy of al dente. Drain, rinse with cold water, and toss with a bit of sesame oil to prevent sticking.

2. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, cornstarch, and water until smooth. Set aside.

3. Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat. Add sliced chicken and cook for 4–5 minutes until browned and cooked through. Remove and set aside.

4. In the same pan, add remaining oil, then garlic and ginger. Stir until fragrant. Add bell pepper, snow peas, and carrot. Stir-fry for 2–3 minutes until tender-crisp.

5. Return the chicken and noodles to the pan. Pour in the sauce and toss everything together until well coated. Cook for another 2–3 minutes to heat through.

6. Top with sliced green onions and serve immediately. Garnish with sesame seeds if desired.


Notes

Rinse the noodles after boiling to stop cooking and prevent clumping.

Use pre-cut stir-fry veggie mixes for a faster prep.

Marinate the chicken briefly in soy sauce and sesame oil for deeper flavor.
