Ingredients

For the Nachos:

  • 1 large bag of thick tortilla chips
  • 2 cups shredded cheddar cheese (or Monterey Jack mix)
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika

Optional Toppings:

  • ½ cup black beans, drained and rinsed
  • 1 jalapeño, sliced thin
  • 1 tomato, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream
  • ½ cup guacamole
  • ¼ cup sliced black olives
  • ¼ cup pickled jalapeños

Instructions

  1. Prepare the Meat: Heat a skillet over medium heat, add olive oil, and cook ground beef until browned. Drain excess grease, then stir in salt, pepper, garlic powder, onion powder, chili powder, cumin, and paprika. Cook for 2 more minutes and remove from heat.
  2. Preheat the Oven: Set to 375°F (190°C) to ensure even melting of cheese.
  3. Assemble the Nachos: On a baking sheet, spread half the chips, followed by half the cheese, beef, and any toppings like beans and jalapeños. Repeat with another layer.
  4. Bake Until Cheese Melts: Bake for 8-10 minutes until cheese is fully melted and bubbly. For extra crispiness, broil for the last 1-2 minutes, watching carefully.
  5. Add Fresh Toppings: Remove from the oven and immediately top with diced tomatoes, onions, cilantro, and a drizzle of sour cream or guacamole.
